This is a beautifully written novel about the journey of an older war veteran and a young girl who had been taken by Indians years earlier. He has been paid to return her to her relatives through the rough Texas territory in 1870. Our Table…Christmas Cookies Part 2

Another Family Favorite – Pecan Tassie Cookies

Katie’s favorite cookie that my mom baked was the Peanut Butter Kiss Cookies (featured last week) but my favorite growing up was the Pecan Tassie Cookies. I am looking forward to baking both these cookies with my children this week and bringing them to Katie’s house on Christmas Day.

Cookie Ingredients:

• 2 Cups Flour
• 2 3oz Packages Cream Cheese
• 1 Cup Butter (Softened)
• 6 Tablespoons Confectioner Sugar

Filling Ingredients:

• 1 1/2 Teaspoons Vanilla Extract
• 1 Egg
• 3/4 Cup Brown Sugar
• 1 Cup Chopped Nuts (Preferred Pecans)

Directions:

• Preheat Oven to 350F
• Cream Together Butter and Cream Cheese
• Add Sugar and Flour – Blend Well
• Shape Dough into Walnut Size Balls (easier if you lightly flour your hands)
• Press into Pan (mini muffin pans)
• Mix the Filling Ingredients and Fill Cookies
• Bake 17-20 Minutes
• Sprinkle with Confectioner Sugar

Family Favorite – Peanut Butter Kiss Cookie

Growing up  in our house we always made Christmas cookies. We baked the usual; iced sugar cookies and toll house chocolate chip. But my Aunt always had a much more exotic (in my eyes) assortment of cookies. One of my favorite was the peanut butter kiss cookie she made, I thought she invented the combination herself!

The Rye Commuter Parking Waitlist Will be Reopening on December 6th at 9:30am. 

Instructions:

• First come, first served basis.
• You will be required to include your name, address, email addresses and phone numbers.
• The fee for the new waitlist will be a $100 one-time fee.
• Upon signing up for the list, you will receive an email confirmation that you are on the list.
