Look what’s coming back to Port Chester. When we first moved to Rye 16 years ago, Café Mirage was pretty much the only restaurant open after 9:00 pm during the week.  You could walk in and were guaranteed a good meal in warm and  friendly surroundings.   After fifteen years they closed their doors. Now they are reopening in a new and bigger space at 223 Westchester Avenue, right up the road from the Capitol Theater.  The menu looks like they’ve kept some of the favorite dishes and added some new ones.

You can check out there website HERE.

Our Table…Cauliflower

Cauliflower Two Ways

Growing up my mother used to make cauliflower like she did most vegetables: boiled to death and tossed with butter.  It is not a surprise I didn’t eat a lot of vegetables back then. Luckily that has all changed. Roasting cauliflower is a delicious way to serve this vegetable.

OPTION 1 – I recently found this version on the blog Orangette:

Take a head of cauliflower and put in top-down and slice it. Some of it will crumble, but most of it will look like little trees put it all on a baking sheet- add sliced onions toss with olive oil, salt and pepper and baked in a 400 degree oven for 30 minutes or so (line your baking sheet with parchment paper – it will be much easier to clean) until the onion starts to caramelize and the cauliflower begins to brown.

An option – 5 minutes before it is done you can add some grated Parmesan cheese and put back in the oven until it is melted into the cauliflower.

OPTION 2 – Another delicious way to serve cauliflower comes from the restaurant Balaboosta in Manhattan. Here is the recipe:

  • White Wine Vinaigrette
  • ¼ cup white wine vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons kosher salt
  • Freshly ground pepper

For the cauliflower:

  • 5 cups of canola oil (I use a lot less – just have the oil about two inches deep)
  • 1 large head of cauliflower
  • 1 cup of flour
  • 1 teaspoon of freshly ground white pepper
  • 1 teaspoon of freshly ground pink pepper
  • Dried currants
  • Toasted pine nuts.

Cut up into florets and bring a large pot of water to a boil add salt.  Make a ice bath. Boil the florets for two minutes and then plunge them into the ice bath to stop them cooking. Combine flour, salt and both peppers in a Ziploc bag add cauliflower florets and shake until coated. Working in batches, carefully drop the florets into the hot oil and fry until golden brown 3 to 5 minutes. Using a slotted spoon transfer florets to paper towels to drain. Transfer to a serving dish and toss with the vinaigrette, and a handful each of currants, pine nuts and chopped parsley. If I am feeling healthy I skip the frying part and just boil the cauliflower for 6-8 minutes.

Enjoy! – Katie Irwin
